| NON -ALCOHOLIC BEVERAGES AND COCKTAILS

With all the functions like harambee's that Kenyans have and endless
round of parties, what can one drink while avoiding alcohol? Even for those
whose responsibility it will be to drive after the party or function and should
not actually take any alcohol? We are going to show you how with a little bit
of imagination, one can make from the exotic to fun cocktails.

- ¼ Carton cranberry Juice
- ¼ Carton orange juice
- 2 tbsp. Grenadine
- 1 tsp. honey
- Cola
Method
Pour the cranberry juice, orange juice and grenadine over ice and fill to the top with cola. Stir and add
honey. Garnish with a slice of lemon.

2 cups of milk
2 tbsp. Cocoa powder
1 tbsp. Vanilla extract (essence)
2 tbsp. Honey
1 tsp. Ground cinnamon
Method
Place all ingredients in the blender and whiz on medium speed of the blender or whisk thoroughly until well
blended. Pour and serve chilled or warm.

Orange juice
Tonic water
Ice
Method
Mix equal amounts of orange juice and tonic water and pour over ice. Extraordinarily simple but tastes
remarkably like a screwdriver.

1 medium to large orange
1 lime
1 apple
1 dash orange juice
1 dash apple juice
1 dash whipping cream or milk
Ice
Method
Whisk or blend all ingredients with Ice. Serve in a small bowl garnished with strawberries or grapes and a
straw.

¼ carton passion fruit juice
Dash of cranberry juice
Dash of lemon juice
Club soda
Method
Mix all the juices in a highball glass filled with ice and soda. Stir well and garnish with a cherry or
small strawberry and a long straw.

1 chopped lime
1 tsp. Cane sugar
1 tsp ginger
1 glass crushed ice
1 glass apple juice
Method
Chop the lime and transfer to a glass. Stir in the cane sugar and ginger before adding the crushed ice. Fill
up with apple juice.

6 tbsp. Fine ground whole rich coffee beans
1 tsp. ground coriander
4 - 5 ground cardamom pods (whole green)

Method
Brew the coffee as usual with the spices and let it cool. In a tall glass, dissolve 1 or 2 teaspoons of
sugar in an ounce of the coffee. Add 5 - 6 ice cubes and pour the rest of the coffee to within about an
inch of the top of the glass. Rest a spoon, backside up on top of the glass and slowly pour whipping cream
onto the spoon. This will make the cream float on top of the coffee rather than dispersing it into it right
away.

Punch is a party favourite but instead of going mad tipping every spirit you can lay your hand onto into
the bowl, why not mix a separate fruit punch for those who have to keep off alcohol.
(serves 16)
¼ Carton pineapple juice, (frozen)
¼ Carton cranberry juice (frozen)
2 cups lemonade (frozen)
2½ cups ice cold water
2 cups strawberries
1 banana
1 bottle club soda
1 bottle ginger ale
2 bottles lemonade
Method:
All frozen items are to partially thaw. Use as much lemonade or equal amounts of other soft drinks to make
the punch to your taste.
1. Using a blender or whisk, blend the juices a little at a time, pouring into a large punchbowl or other
larger container. Blend or lightly mash the banana or strawberries only until coarse blended, not pureed.
Mix the ice water in the punch bowl with other ingredients and stir.
2. Just before serving, add the soda, ginger ale and enough lemonade to suit your taste. Stir gently to mix
all juices from the sediment on the bottom of the bowl. Serve as it is or over ice.
Note: You may wish to make an ice ring to float in the punch for a decorative touch. Using a ring
mould, freeze a shallow layer of water and put fruits and mint leaves in a pattern over the ice. Pour a
thin layer of water over and re-freeze.
Repeat these steps until you have built up the ice ring and made several layers of fruit designs. Free the
ring from the mould and place in bowl just before serving. Use juice instead of water for the ice ring if
you wish.

3 eggs
2 cups milk
ground nutmeg
¼ cup sugar
2 teaspoons vanilla
Method
Put eggs, sugar, milk and vanilla into container. Cover. Whip until smooth. Pour into 4 mugs. Sprinkle
with nutmeg. Makes 4 servings. For a warm eggnog heat the milk before adding to container.

2 squares unsweetened chocolate (finely chopped)
½ cup sugar
¾ cup crushed ice
2 pints hot coffee
1 pint coffee ice cream
Method
Put chocolate, hot coffee and sugar into container or bowl. Stir until chocolate melts. Add ice cream in
scoops and crushed ice. Whip until smooth. Pour into 4 tall glasses.

2 cups milk
¼ cup brown sugar
2 large bananas cut into 1-inch pieces
1 cup crushed ice.
Method:
Put all ingredients into container and liquefy until smooth. Pour into 4 tall glasses.

2 bananas roughly chopped
½ cup malted milk powder
2 cups milk
½ pint vanilla ice cream
1 cup crushed ice.
Method
Put all the ingredients into blender container and liquefy until smooth. Or mash the fruit pulp in a
mixing bowl until very smooth then whisk briskly until well combined with the other ingredients. Pour
into 4 tall glasses. Any other fruit pulp such as strawberries, mangoes, pawpaw and passion fruit may be
substituted.

1 pint chocolate ice cream
2 cups milk
Whipped cream
¼ cup chocolate syrup
Method
Put ice cream in scoops, syrup and milk and cream into container or mixing bowl. Blend or whip until smooth
being careful not to turn the cream into fat by over blending. Pour into 4 tall glasses. Ice cream of any
flavour may be substituted to vary the flavour

2 cups tomato juice
1 stalk celery cut into 1-inch pieces.
½ tsp. seasoned salt
1 medium carrot pealed and cut into 1 inch pieces
1 tbsp. lemon juice
1 cup cracked ice
Method
Put tomato juice, carrot and celery into blender. Liquefy until smooth. Add lemon juice, seasoned salt and
crushed ice. Whip until blended. Pour into 6 juice glasses.

Wash carrots thoroughly; cut into strips; feed into juicer.
Apart from being a popular drink, carrot juice is an excellent source of vitamin A and an excellent
appetizer. It can be mixed with practically all other fruit and vegetable juices to add color and flavour.
It is ideal children (and adults too who just do not eat vegetables. Approximately 4 large carrots are
needed for each cup of juice.
Wash celery sticks thoroughly. Feed outside greener stalks into juicer. Here is another drink that is
popular alone and is a wonderful combination with other juices. It adds good flavour to tomato juice or
green pepper juice. Approximately 4 large stalks per cup of juice.
You may peel or not according to your own taste (most prefer juice from peeled cucumbers). Feed into juice
extractor in strips. Served chilled or over ice. Add to salads. Approximately 1 cup juice to 1 large
cucumber.
Wash, cut into strips and remove seeds and center for feeding juicer. 4 peppers make 2 ample servings. You
may prefer to combine with carrot juice. Celery and cucumber mix especially well too.
This excellent vegetable should be washed thoroughly. Use the leaves and stalks, but fold and round first
for best results when feeding into juice extractor. Most people prefer their spinach juice combined with
another flavour. Try a flavour like pineapple mixed with the spinach or other vegetables like carrots,
celery or cucumber.
Whether you think of tomatoes as a vegetable or a fruit, the whole family will really love fresh squeezed
tomato juice. Use only plump ripe tomatoes in season. Serve as an appetizer or mid afternoon pick-up.
Season with lemon or add some parsley juice. So many ways to use this all time favourite alone or in
combination with other juices.
Peel and cut into thin strips and feed into juicer. An excellent drink by itself; also combines well with
other fruits.
